I am not one to cook but since going vegan over three months ago I have had to learn. I make 99.99% of my meals and eat frozen items occasionally.
I have always, up until this point, hated cooking or really anything to do with being in the kitchen. I was not the best at it growing up and never really had the urge to learn. Since changing the way I eat I have embraced cooking and come to find out…actually it’s still not my favorite but the end result is usually worth it!
Anyway, today I decided to make vegan rice paper sushi. I sliced carrots, red cabbage, Boston lettuce, avocado and cucumber, cut up some nori (seaweed) and fried some tofu. I followed a recipe for a tofu glaze from browngirlveganeats.com that I found on Pinterest. They were absolutely delicious and I ate way too much! I also made a delicious dipping sauce inspired by the tofu glaze.
Was I exhausted by the time I was done? Yes! Was my whole house filled with a smoky haze? Yes! But I truly enjoyed the finished product so I am not complaining, it was well worth it!
Quite a few of the rolls fell apart but I am pretty sure that was due to my overstuffing:) Next time I will be less liberal with my ingredients.
