Okay, so by the time this post is live I will have been eating a fully vegan diet for one month. Here are the updates.
I have had a lot fewer stomach aches. I am talking like two in the last month as opposed to one a day. So, that by itself is enough of a win. But, I also have been more excited about eating and cooking. I have never been one for cooking but something about knowing that the food I am cooking is delicious, good for me and NOT going to give me a stomach ache makes it almost fun! I have spent most of my teen and young adult years bored of food and never really excited to eat…until now!
I have tried quite a few recipes and attempted to come up with a few on my own. It is safe to say that the ones I find from others are much better than the ones I conjure up!
I was at one point eating rice and beans for every meal and of course got really tired of them…but that is on me…I was unmotivated for a while and relied on what was super easy.
I have learned that I love sweet potatoes, which I previously had written off. I also love tofu! Younger Kaylie would be shocked! I always thought I would be unable to handle the texture and honestly I thought it would taste musty…I am glad I was wrong! Tofu is honestly one of my staple foods now! I also need multiple avocados in the house at all times, which I already knew before going vegan. I have loved avocados for many years but now they are extra important.
I 100% know that switching to a vegan diet was a great idea and I should have taken the leap sooner!
One thing I know I need to focus on and keep track of better is making sure I am getting all the necessary vitamins and nutrients that are required to function.
