Recently and I mean, a week ago, I made the decision to go vegan. I made this decision based on a few things but the main reason is the fact that for as long as I can remember I have gotten sick from dairy and really any animal product I have eaten.
I am working on finding different meals and foods that I like and give me all the nutritional necessities. It definitely will be a learning curve but I am excited about it. I am excited to find different foods that I like or foods that I avoided but will now enjoy.
I was raised on beef and potatoes by parents who were also raised on beef and potatoes so it will be a change. I know a few people who are vegan and follow a few influencers who are also vegan so I am hoping to learn a lot from them. I am not perfect at it yet of course but I plan to improve.
I think this will be really good for me! I mean it is already making me excited to cook and eat! That is definitely a step in the right direction!
I saved a bunch of recipes I am excited to try! I am going to try to share some of them just in case anyone is interested:)
So far, at the beginner level, my favorite meals have been avocado toast, avocado and vegenaise salad on toast and a good old fashioned veggie burger with vegan bbq sauce, avocado and spinach! I made my first vegan double chocolate chip muffins yesterday which are amazing! Even my family liked them! They are wonderfully moist and the perfect amount of sweetness! Tomorrow I am planning on making vegan pancakes! I was going to make them today but I was busier than I anticipated.
Eating has not been an enjoyable thing for me in recent years, I am not sure if it was because of my many stomach aches or the lack of diversity in my meal choices. Maybe both! But making this change so far has reignited my love for food and trying new things! I am excited to see where this journey takes me!
